Can we see the universe just after its first minutes?

We cannot directly see the first few minutes themselves, because before photon decoupling (about 380,000 years after the Big Bang) the cosmos was opaque to light. The observable fingerprints of that era are the cosmic microwave background and the light-element abundances left by Big Bang nucleosynthesis. By analyzing CMB fluctuations and the ratios of hydrogen, helium, and lithium, astronomers reconstruct the temperature, density, and expansion rate of the universe minutes after its beginning—not its light, but its physical signature.

How were the multiple acoustic peaks in the temperature power spectrum of the cosmic microwave background forged by processes in the early universe?

Before recombination the universe was a hot photon-baryon plasma, and the tug-of-war between gravity and radiation pressure made density perturbations oscillate like sound waves. At the moment photons decoupled, modes of different scales froze at different phases: the scale caught at maximum compression left the hottest first peak, followed by alternating peaks and troughs at a characteristic angular scale near one degree. The first peak's position directly measures spatial curvature, and the ratios of peak heights fix the baryon and total matter densities - pillars of precision cosmology.

Why is the cosmic microwave background called the 'afterglow of the Big Bang', and why has its temperature faded to only about 2.7 K?

In the early Universe a hot plasma filled space, and photons were scattered over and over by free electrons, unable to travel freely. About 380,000 years after the Big Bang the temperature fell to roughly 3000 K, protons and electrons recombined into neutral atoms, and the photons decoupled and have streamed freely ever since. Cosmic expansion stretched their wavelengths by a factor of about 1100, cooling their blackbody spectrum to about 2.725 K today - the most direct evidence that the Universe began in a hot, dense state.
