How do the Maillard reaction and caramelization differ chemically, and why does the former proceed at lower temperatures?
Caramelization is sugar alone undergoing dehydration, enolization, and polymerization at high temperature (sucrose needs roughly >160 °C). The Maillard reaction instead condenses carbonyls of reducing sugars with amino groups of amino acids or proteins into Schiff bases, followed by Amadori rearrangement and Strecker degradation cascades yielding melanoidins and pyrazines. Amines act as nucleophilic catalysts that lower the carbonyl activation barrier, so browning proceeds readily near 100 °C or below — one reason roasted meat browns faster than boiling sugar.

How does caramelization differ from the Maillard reaction?
Caramelization is the anhydrous thermal decomposition and polymerization of sugars above ~160°C, yielding caramel color and bittersweet flavor without amino compounds. The Maillard reaction needs sugars plus amines; both are non-enzymatic browning but mechanistically distinct.

Why do lemon-juice letters appear only when heated?
Lemon juice holds water, citric acid and sugars plus other organic compounds; once the water evaporates the thin residue left behind is almost colorless. Heating drives off water and then caramelizes and oxidizes that residue into larger brown molecules, so the writing shows up. The point is the different thresholds: paper needs a fairly high temperature to char, whereas the juice residue browns at a much lower one, so under the same heat only the strokes darken. Milk and onion juice work on the same principle; but too close a flame and the paper blackens first, swallowing the message.

In the nonenzymatic browning that occurs while bread bakes, why does lysine take the hit before any other amino acid?
The epsilon-amino group capping the lysine side chain is unusually nucleophilic: it attacks carbonyls of reducing sugars first, giving Schiff bases that undergo Amadori rearrangement into later stages, and that residue thereby loses nutritional value. Along the way the same cascade releases pyrazine aroma compounds and macromolecular melanoidin pigments. Holding water activity at 0.6 to 0.7 and trimming oven temperature buys a compromise between flavor generation and preservation of the essential amino acid.

Why does a cut apple turn brown quickly, and why does a squeeze of lemon juice slow the change?
Cutting the fruit breaks cells open, and polyphenol oxidase then uses oxygen to oxidize phenolic substrates into quinones, which polymerize into the brown melanin pigments; this is enzymatic browning. Lemon juice helps twice over, because its ascorbic acid reduces the quinones back to phenols while citric acid lowers the pH and suppresses the enzyme. Blanching to denature the enzyme or keeping oxygen away works just as well.

Why does a bread crust turn brown and give off its characteristic toasted aroma?
The browning is mainly the Maillard reaction. Above roughly 140 °C, the carbonyl group of a reducing sugar condenses with the amino group of an amino acid or protein side chain to form a glycosylamine, which rearranges through the Amadori pathway; later Strecker degradation liberates pyrazines, aldehydes and hundreds of other aroma molecules, while the final stage condenses into brown melanoidins. The crust, being hot and dry, offers ideal conditions, so color and aroma develop together.

Yogurt and pickled vegetables keep far longer than fresh milk or fresh greens — how does lactic-acid fermentation actually preserve food?
The key is acidity. Lactic acid bacteria ferment sugars into lactic acid and push the pH down to around 4, where nearly all spoilage and pathogenic microbes stop growing: undissociated organic acid slips through microbial membranes and dissociates inside the cell, wrecking the proton gradient that powers their metabolism. The fermenters meanwhile occupy the niche, exhaust the nutrients, and release hydrogen peroxide and bacteriocins; with these barriers stacked, contaminants cannot multiply, which is why sauerkraut, kimchi and yogurt keep so well.

Sodium nitrite performs two jobs at once - suppressing Clostridium botulinum and coloring cured meat - and no single substitute covers both. In the acidic curing matrix NO2- becomes HNO2 and slowly releases nitric oxide; NO binds myoglobin to give nitrosomyoglobin, which heating converts into the stable pink nitrosohemochrome behind the characteristic hue. NO likewise ties up bacterial iron-sulfur proteins, cutting electron transport and energy metabolism so botulinum toxin never forms. Paired with sodium ascorbate, color develops faster while residual nitrite drops, sharply reducing the nitrosamine risk.

Why does milk turn sour and lumpy when old?
Bacteria turn milk sugar into acid, and the acid makes protein clump, so it curdles. People use the same idea on purpose to make yogurt, letting good bacteria sour the milk.

Why does bread grow green fuzz after a few days?
Mold spores from the air land on bread and grow in warmth and dampness, forming green fuzz. Molds feed on the bread and can make poisons, so moldy bread should not be eaten.
