Why does cooling a system by one more degree get exponentially 'costlier' near absolute zero?
The third law says entropy approaches zero at absolute zero, and reaching zero entropy needs infinitely many steps. In practice each step closer leaves less 'room' to dump heat, so efficiency collapses and cost explodes.

Why can liquid nitrogen (~-196°C) instantly freeze a flower brittle without making its metal cup explode?
The extreme cold freezes a flower's water in an instant, swelling and shattering cells so it crumbles. The metal cup only cools; it doesn't 'freeze', and in an open vessel the nitrogen boils away instead of building pressure.

Why is liquid helium far colder than liquid nitrogen, yet rarer and harder to make?
Helium only liquefies below about -269°C, nearly 100°C colder than nitrogen, so cooling it wastes huge energy. Helium is also scarce on Earth, found mostly in natural gas, making it costly and hard to produce.
