Oil-and-vinegar dressing separates again after shaking — can physics keep it mixed forever?
An oil-and-vinegar dressing is a temporary emulsion of oil (low-density, hydrophobic) droplets in water/vinegar. Shaking disperses them, but the density difference and interfacial energy drive droplets to coalesce and rise, separating by Stokes settling—a thermodynamically more stable state. To keep it mixed you need an emulsifier (mustard, egg yolk/lecithin, gum arabic) that lowers interfacial tension and stabilizes a film around droplets, which prolongs but does not make it permanent. Strictly, physics cannot keep two immiscible phases uniformly mixed forever without such stabilization.

Why can a pressure cooker cook food faster than an ordinary pot?
A pressure cooker is well sealed, so trapped steam raises the internal pressure and pushes the boiling point of water above 100 degrees Celsius. The higher temperature cooks food faster and uses less energy.

Why is it harder to boil an egg properly at high altitude?
At high altitude the atmospheric pressure is lower, so water boils at a lower temperature, sometimes around 90 degrees Celsius. With less heat, the proteins coagulate more slowly and the egg takes longer to cook.

Why does blowing on hot soup make it cool faster?

Why does a corn kernel pop into popcorn when heated?

Why do green vegetables look brighter after a quick blanch?
Green vegetables get their color from chlorophyll, which is sensitive to cold and acid. Raw leaves have tight cells and air pockets that scatter light, dulling the green; a quick blanch deactivates chlorophyll-degrading enzymes, drives air out of the cells, and slightly softens cell walls—reducing light scattering and boosting the reflection of green light, so the color looks brighter. Overcooking, however, demetallates chlorophyll to dull yellow-brown, so the dip must be brief.

Why does a new stainless pan stick while a seasoned cast-iron pan does not?

Why does adding salt to boiling water raise its boiling point?
When salt dissolves it forms a solution; the solute particles occupy surface sites and make it harder for water molecules to escape as vapor, so a higher temperature is needed to boil. This is boiling-point elevation, a colligative property of dilute solutions.

Why do dumplings sink to the bottom of the pot at first and then float up once they are cooked?
